Love peanut butter? How about pretzels? If you answered yes to both questions, today is your lucky day. Introducing peanut butter pretzel truffles! With only 3 ingredients (which you may already have in your cabinets), these truffles are pretty simple to make. The hardest part was dipping the balls in the chocolate. I'm still trying to find the perfect way.
If you end up with extra chocolate & pretzels (like I did), I suggest making some chocolate covered pretzels too! They're just as delicious.
1/2 cup peanut butter
1/2 cup chopped/crushed pretzels (I used the long skinny ones)
1/2 - 1 cup semi-sweet chocolate chips or chocolate melts

Combine the peanut butter and pretzels in a bowl until well combined. Place the bowl in the freezer for 30 minutes, or until firm enough to handle. Roll the mixture into about 16-20 balls (1 tsp each). Place on a pan lined with wax or parchment paper and place in the freezer for about an hour or until very firm.
Melt the chocolate and then remove the balls from the freezer. Dip the frozen balls into the melted chocolate and then refrigerate until firm, about 30 minutes.
